The Great 2012 Cooking Extravaganza! Day 21

Hello friends, and welcome back! (yeah, I know, I need to find a new opener, but gotta start somewhere, right?!)

Tonight’s dinner was simple, but REALLY good!  And I like that it’s versatile…  I won’t type in the whole recipe here, because it’s one of those where you pick a pasta, pick a sauce, pick a seasoning blend, pick veggies, etc., and it would take me all night to write the whole thing!  So, here’s what I chose…

Make-It-Mine Skillet Chicken (Version 1)

1/4 cup all purpose flour

1 tsp garlic powder

1/2 tsp salt

1/4 tsp pepper

4 boneless skinless chicken breasts, trimmed and cut into bite sized pieces

2 Tbsp vegetable oil

1/2 cup chopped onion

2 cloves garlic, minced

3/4 cup chicken broth

1/4 cup chicken broth + 1 Tbsp dijon style mustard

2 tsp cornstarch

1 cup sliced fresh button mushrooms

1 cup halved baby carrots

1 cup green pepper slices

Hot cooked pasta of your choice (I used egg noodles)

Place 1/4 cup flour, garlic powder, salt and pepper in plastic bag, mix by shaking SEALED bag.  Add chicken and reseal bag, shake to coat chicken pieces. (I find a gallon sized bag works best, and you might need a little extra flour)

In a very large skillet (or just a large wide pan like I used) heat 2 Tbsp oil, add chicken and fry until golden.  Remove chicken from pan.  Add a little oil if needed, add onion and minced garlic, cook 3-5 minutes or until onion is tender.  Add in 3/4 cup chicken broth, add chicken back in.

Bring to a boil (it boiled for me as soon as I added the broth!), reduce heat, simmer COVERED 30 minutes.

Mix 1/4 cup chicken broth, Dijon mustard and cornstarch in a separate dish, add to chicken dish.  Add veggies.

Return to boil, reduce heat, simmer COVERED another 5-10 minutes or until veggies are crisp-tender.  Served with/over pasta.

I think next time I’m going to try the slightly more Italian version with tomato sauce…
