The Great 2012 Cooking Extravaganza! Day 37

Hello dear friends, and welcome back!

WOW!  Tonight’s dinner was AWESOME!!  And it was completely without recipes, except dessert.  Even picky William liked it, so I know it was good.

Asian Spiced Pork Roast

2-3 pound pork roast

1/2 cup soy sauce

2 Tbsp ground ginger

ABOUT 1/4 cup green onions, rough chopped

ABOUT 1/4 cup corn starch mixed into 1/2 cup cold water

Place roast in slow cooker, cover with water, add soy sauce, ginger and onion, cook on LOW for 8 hours.  Remove from cooker and allow to rest while you strain the juices from the cooker and place them in a sauce pan.  Blend the corn starch into the cold water VERY WELL, slowly add to juices, cook over medium heat until thick, about 8-10 minutes.

Slice roast and serve with sauce!

Along with this, we had fresh steamed green beans, fresh steamed broccoli, and rice made in the rice cooker (SO easy!).

AND, since I had so much leftover rice, kind of sort of on purpose, I made that yummy rice pudding for dessert, but I soaked the raisins in Amaretto first, so it should be really good! Does anyone need me to repost that recipe??  I tried several before I found one worth keeping…
