The Great 2012 Cooking Extravaganza! Day 62

OOPS!  I’m a day behind now…  guess I need to get on the ball!

Last night, Saturday, dinner was sort of a repeat, meat muffins, the one’s with the cream of mushroom soup, William specifically asked for them, and peas for dinner.  Then, because it was movie night, we had popcorn and movie candy.  Talk about overkill!  We all sort of have sugar hangovers today.

Just in case you missed it before, here’s the recipe for the muffins:

1 lb ground beef (I used ground round this time), browned and drained

1 can cream of mushroom soup

1 can refrigerated biscuits

About 1/2 cup shredded cheese

Salt and pepper

Cooking spray

Preheat oven to 400 degrees.  Spray 10 muffin cups in a one dozen muffin pan with cooking spray.  Flatten the biscuits as much as you can with your fingers, making flat rounds that you place in the sprayed muffin cups, spreading them up the sides of the cups as much as you can without ripping them.

Brown and drain the beef, then stir in the cream of mushroom soup.  Mix well until it a thick sauce consistency.  Add in salt and pepper to taste and mix well.  Place a couple of tablespoons of this mixture in each muffin cup, filling each until all meat mixture is used up.  Sprinkle each filled cup with shredded cheese.

Bake at 400 degrees for 10-12 minutes or until muffin edges are golden brown.  My oven, I tend to go the full 12 minutes, otherwise the biscuits are a little soggy.  Serve!

Working on pork chops for tonight, will make sure I post the recipe tonight so I’m back on track!
