The Great 2012 Cooking Extravaganza! Day 63

Hello again, and welcome back!!  So glad you could join me again!

Tonight, I was feeling a little adventurous, so I played around a little with flavors I know go together, but I’ve never COOKED together before.  So here’s what we had…

Pork Chops with Apples

4-5 boneless pork chops, well trimmed

1 Gala apple

1-2 stalks celery

1 medium carrot

4 Tbsp butter

Chop celery into small crescents, I didn’t see any point in chopping it any smaller, but that’s a matter of preference.

Peel and chop carrots into rounds.

Core apple and chop into small (about 1/4″) pieces.

Melt butter in a large skillet over medium heat.  Add in carrots, and cook 4-5 minutes.  Add in apples and celery and cook another 4-5 minutes.  Add in pork chops, and cook about 8-10 minutes per side, stirring veggies and apples around to cook evenly.  Remove pork chops when done through, place on serving platter, spoon over veggies and apples and serve.

I served this with a nice fresh salad of iceburg lettuce, fresh spinach, tomatoes, carrots and celery with home made fresh ranch dressing.
