The Great 2012 Cooking Extravaganza! Day 79

Hello again friends, and welcome back!  Hope you all are having a nice week.

Today was a little more laid back than yesterday, not as much going on, but got some things done that needed to be done.  Pulled some weeds out front this morning, sure I’ll pay for that tomorrow.  Did some dishes, made soup, then spent most of my day bent over a table working with beads, so my neck is sore.  I’ll have some photos of my newest work tomorrow, I think.  Gotta finish it up first!!

Anyway, here’s what I cooked today:

Taco Soup

1 large can diced tomatoes

1 can corn (I used shoepeg this time)

2 cans red kidney beans

2 packets taco seasoning

1 packet ranch seasoning

DO NOT DRAIN any of the juices from any of your ingredients.  Put everything, juices included, in a crock pot.  Cook on LOW at least 4 hours, longer is better.  Serve as is, or with cheese, chicken, browned ground beef, whatever you would like to add!

Made as above, without any add-ins, a whole bowl of this soup is only 1 point for Weight Watchers!  In fact, this is a Weight Watchers recipe I got from a co-worker many years ago.  It freezes well after cooled, so you don’t have to eat it all at once, and you can make it in large batches for later use.  And I love that it’s so versatile!

We also had leftover meatloaf, leftover baked beans, leftover smashed potatoes, and fresh gravy.  All in all, a really good meal!!
