The Great 2012 Cooking Extravaganza! Day 86

Hello again friends, and welcome back!  So glad you could join me again!

It’s been a good day around here.  My father came through surgery just fine, looks good, on enough drugs that he should sleep well tonight!  My mother is staying with us for a few days until he gets released, so she can be close to him and go visit every day without driving 2 hours each way.  And she gets to enjoy some of my new found cooking skill while she’s here!!  My boys are very happy to have her with us, and thrilled that their grandfather is doing so well.

So here’s the treat I whipped up for her first night here:

Chicken and Sausage with Rice

3 large boneless skinless chicken breasts

1 package Oscar Mayer turkey smoked sausage

1 can tomato paste

1 carton Great Value chicken broth

1 packet Swanson concentrated chicken broth (Flavor Boost)

Enough water to cover meats in crock pot

1 Tbsp garlic powder

1 Tsp chili powder

1/4 Tsp cayenne pepper

Salt and pepper to taste

4 cups rice

Cut up sausages into rounds, then cut rounds into quarters, place in crock pot.  Place chicken breasts in crock pot.  Add in chicken broth, tomato paste, spices, and enough water to cover the meats.  Then add in the Flavor Boost packet contents.  Cook on LOW 7-8 hours.  Remove chicken and sausage from pot, shred chicken, set aside.  Strain broth into stock pot, add rice, cook approx. 10 minutes over medium heat, stirring frequently.  Add meats, cook another 10-15 minutes, stirring frequently, until rice is tender.  Serve!

This went over very well with everyone, even William, who says he doesn’t like rice, but he ate it!
