Starting to count down to the end of the year, only 9 weeks to go.  Can you believe it, less than 2 months until Christmas!  And I actually bought my first few presents this weekend.  One for my mom, and a couple for Mike.

It was kind of a slow week.  Work was work, William had a good week at school, Mike had a good week at work, and James is James…  nothing exciting really.  I did finish my second beaded cuff, so that was cool!  Here’s some photos…

And I spent today putting together some more bases for more cuffs.  Don’t know why I was so afraid of this style of beadwork, it’s FUN!!

And I did my nails for Halloween!

It’s kind of a burnt orange color with black tips and black swirly stickers with sparkles!

Anyway, since there really isn’t much gossip, on to the food.  Even that is a little flat this week, I’m having a hard time getting inspired lately, cooking wise anyway.  But, since I got a little raise with my review last week, maybe next pay day I can splurge on some new ingredients and maybe a cook book, get some fresh stuff to share!

Monday

Grilled pork chops

6 boneless skinless pork chops

Everglades original seasoning (the green one)

Preheat your George Foreman grill to MEDIUM.  Sprinkle a little (how much is really up to you, but this stuff is salty!) Everglades seasoning on each side of the chops.  Put 3 at a time onto your grill, and cook until no longer pink inside, and crispy grilled on the outside.  Repeat with the remaining chops, and serve when done!

Steamed veggies, the usual, broccoli and peas.

Tuesday

Alfredo Chicken Pasta

2 boneless skinless chicken breasts

1 jar alfredo sauce

1 box Dream Fields angel hair pasta

Trim any excess skin and fat off the chicken breasts.  Cut into small bite-sized pieces.  Heat a large skillet to medium, add in 2 tbsp vegetable oil, add in chicken.  Cook until no longer pink, add in alfredo sauce.  Reduce heat and simmer on LOW while you cook pasta to package directions.  Drain pasta and put past, chicken and sauce all together in the empty pasta pot, mix well and serve!

Steamed veggies, broccoli, peas and carrots…

Wednesday

Pot Roast

1 2-3 pound sirloin tip roast (or whatever cut you prefer)

1 pkg french onion soup mix

1 quart water

Put the roast in a crock pot, add in soup mix and water, should NOT cover roast.  Set pot to LOW and cook 8-10 hours.

Remove roast, drain broth into a sauce pan, straining out onion pieces if desired.  You should have about 3 cups of broth, maybe 4, depends on how much steam your crock pot releases.  Add in gravy mix per package directions, heat over medium, stirring frequently.  Bring to a boil, cook one minute, remove from heat and serve!

Baked Potatoes

I actually cheated a little on this one, I used the microwave, but they came out OK.  For each 1 pound potato (these are the really big ones!), wash well, rub with a little oil, sprinkle with salt, poke some holes, cook 10 minutes on high, or until done through.

I had leftover taco meat mixed with black beans, added some diced tomatoes, and added some shredded cheese.  It was actually really good!

Sunday

Kim’s Chicken Casserole

2 boneless, skinless chicken breasts, trimmed if needed and cut into bite sized pieces

2 packages stove top stuffing mix

12 slices Swiss cheese

2 cans cream of mushroom soup

Pre-heat oven to 350 degrees

Wash and drain chicken. Lightly butter 13 X 9 X 2 casserole dish

Prepare stuffing: Put all the dry ingredients in the casserole dish.  Heat 3 cups water with 1 stick of butter for 5 minutes in the microwave, pour over dry ingredients and mix well.

Mix chicken with soup.

Lay cheese on top of stuffing, top with chicken and soup.  Bake 1 hour 15 minutes at 350 degrees.

This serves 6 – 8 people

Glazed Carrots

1 C frozen crinkle cut carrots

2 Tbsp butter

1/4 C brown sugar

Cook on high about 5 minutes in the microwave, stir and serve!

Peas

Steamed frozen peas, done in the microwave with a little butter, about 5 minutes on high from frozen on about 1 C peas.

So, not a HUGE food week, but a GOOD food week.  I got a few odds and ends when I went shopping, going to try some quick dinner ideas I’ve seen recently, see if they turn out as good as they look…  I’ll keep you posted!

The Great 2012 Cooking Extravaganza! Day 285 – 291 (Week 42)

WOW, can you believe, I’ve been at this since January 2nd, 42 weeks now!  I’ve never stuck with any project this long, unless you count marriage as a project, but I have help there.  This one has been almost all mine!

So, this past week, let’s see…

Mike’s “wonderful” co-worker left, so he’s a happy camper.  Taking on her clients, rearranging his schedule to fit them in, I think it’s going to be much cooler for him, he’s been bored for a while.  He already seems happier at home, too, so that makes ME happy!

William had a good week at school.  Short week because it was the end of the grading period, so he got Friday off.  He slept in, and didn’t really do much, says he was bored.  Wish I had known they were going to end up postponing my review until this coming Tuesday, I would have taken the day off to hang out with him!  He hung out with his best buddy for half the day Saturday and Sunday, so I think that made up for the boring Friday.  Back to school tomorrow…

My week was kind of fun!  Organized a Boss’ Day celebration on Tuesday, pulled together 6 groups that all do the same thing, just for different managers, but all under one senior manager.  Have to say, I won’t do it again, too many negative people where I work, but the folks that participated were great!!  Then, on Wednesday, my new friend at work decided the job just wasn’t for her, so she quit.  Kind of sucks, she was fun!  The rest of the gang is pretty cool, so we’ll be OK and all, but I was a little bummed.  And I was the only one she came to say goodbye to, so I hope she finds a way to keep in touch!  Work itself is starting to settle into a routine, I feel more comfortable, actually looking forward to my first review as an employee and not a temp!!

And we won’t even talk about James, he’s never here anymore, kind of feels like a boarder rather than my kid.  Oh well…

Mike and William vacuumed today, that was cool.  I swept and mopped the kitchen floor, my back was killing me!  But the kitchen feels so much nicer now.  Scooped the cat box, changed the paper we keep under it (she misses sometimes, but she’s getting much better since we got the new litter box!).  Finished laundry early, that was nice.  So chores done early, I spent the rest of the day beading!  Check out my first bead embroidered cuff…

Anyway, on to the food!  That’s why we’re all here afterall!  We ate out a couple of times, got a little lazy, but we’ve all committed to eating at home more, so I guess we needed to have this week to make that choice.

Monday

Free for all!

We had all the leftovers from the weekend, the pizza muffins, meatball muffins, pigs in a blanket, rolls, veggies, etc., so we sort of had to have a little bit of everything to clean out all the bags and containers from the fridge!

Of course, I still wanted to make something, and I had picked up a couple of sweet onions on my last shopping trip, so I made…

Onion Straws

2 large sweet onions

1 cup flour

1 Tsp salt

1 Tsp pepper

Cooking oil for frying

Remove outer skin from onions, leaving root side on to keep the onion together.  Using a Mandolin type slicer, slice the onion VERY thin, place on paper towels to remove some of the excess liquid.  Let sit for about 10 minutes.  Separate onions as much as possible, put into a large wide shallow bowl, sprinkle over flour, salt and pepper.  Mix well, trying to separate as much as you can without pulling each onion out individually.  You will end up with these cool little lumps that kind of look like mini bird nests when you fry them.

Heat some cooking oil in a large skillet over medium to medium low heat, I set my stove on about 4.  Pull out some small clumps or individual onion strands, add them a few at a time into the oil, and cook a couple minutes on each side, or until golden brown.  Remove to a plate or bowl lined with paper towels, sprinkle with salt if desired.

Tuesday

Pizza hut – Mike got a special offer in his e-mail, 2 large 3 topping pizzas delivered for $8 each, so we had to…

But I HAD to do something, so I made up my fruit salads for the week.  I had papaya, red and green grapes, and a red pear.

Wednesday

Italian Chicken Pasta

2 boneless skinless chicken breasts

1 pkg Italian flavor Philadelphia cooking cream

1 Pkg Dream Fields angel hair pasta

Salt and pepper to taste

Trim any excess skin or fat from the chicken, cut into small bite sized pieces.  Heat a couple tbsp of cooking oil in a skillet over medium heat, add chicken and cook until no longer pink.

Meanwhile, boil the water for the pasta.  This pasta takes literally 6 minutes to cook, so don’t start it too soon!  Once the chicken is cooked, drop your pasta into boiling water and set your timer for 6 minutes.

Add the cooking cream, salt and pepper to the chicken pan, stir it well, the cream will liquify.  Reduce heat to low until pasta is done.

Drain the pasta, and add it to the chicken pan, toss with tongs, and serve!!

We also had some side stuff, like chopped tomatoes, steamed broccoli and steamed peas, so we made this into a make-your-own-bowl kind of night.  Everyone got chicken with sauce and pasta, but then we could each add what we wanted, so I had tomatoes and broccoli in mine, Mike went for just broccoli, William added peas to his, so we all got a good meal!

Thursday

Chicken Bacon Ranch Wraps

2 boneless skinless chicken breasts

1 lb bacon

8 soft taco size tortillas

1 pkg ranch dressing mix

Prepared ranch dressing

Cut bacon into small pieces, cook over medium heat until crispy, remove to paper towel lined plate, and set aside.

Trim excess fat and skin from chicken, and cut into small bite sized pieces.  Saute in a few tbsps of the bacon grease over medium heat until cooked through.  Add in 1 pkg ranch dressing mix, mix well until you have a sort of ranch sauce in the pan, remove from heat to serving bowl.

Spoon about 2 – 3 Tbsp chicken into a tortilla, sprinkle over 1-2 Tbsp crispy bacon pieces, squirt on a little bit of prepared ranch dressing and add some shredded cheese if desired (or some leftover onion straws, that was YUMMY!), roll up and serve!

Meatball Subs

Remember all those meatballs I made last weekend, (2 lbs worth!), well, we still have a few left, so I put them in the crock pot for about an hour with a jar of spaghetti sauce, cooked them on HIGH, and put them on some steak rolls with shredded cheese…  YUM!  And a nice change from our usual Saturday night over-indulgence.

Then we had microwave chocolate chip cookies with a big scoop of vanilla ice cream on top, OH YEAH!  Wish I had gotten a couple of photos… oh well!

Microwave Chocolate Chip Cookies

1 Tbsp melted butter

1 Tbsp white sugar

1 Tbsp brown sugar

1 Egg yolk

3 drops vanilla

Mix these together in a small bowl.

Add in 1/4 cup flour and mix well.

Add in 2 Tbsp chocolate chips and mix again.

Spray a ramekin or small bowl with butter flavor cooking spray, put your cookie dough into this prepared bowl.  Cook on HIGH 50 seconds.  Top with a scoop of ice cream if desired, or whipped cream, or nothing!  They are great by themselves!!

Sunday

Chocolate Chip Pancakes

Yes, we had Sunday breakfast, and it was GOOD!

1 3/4 C flour

2 Tbsp sugar

2 Tsp baking powder

1/4 Tsp salt

1 egg, lightly beaten

1 2/3 cups milk (I like mine a little thinner, the recipe actually called for 1 1/2)

3 Tbsp vegetable oil

1/2 cup chocolate chips

Mix everything together in a large bowl, mix well!

Heat a large skillet over medium heat, about a 4 on my stove.  Pour about 1/2 cup at a time of your batter into the skillet, cook about 1 minute per side, or until golden brown.  Remove to a serving plate, butter while warm, serve with syrup! (and bacon of course!!)

I made chicken flavor box-mix stuffing, because that’s what I had, and that’s what Mike wanted tonight.  Made to package directions in the microwave while the chops were cooking, worked out well!

Cook on high about 5 minutes in the microwave, stir and serve!

Peas

Steamed frozen peas, done in the microwave with a little butter, about 5 minutes on high from frozen on about 1 C peas.

Green Beans with Almonds

1 bag frozen cut green beans

4 Tbsp butter cut into pieces

About 3 Tbsp slivered almonds

Put the green beans and butter in a large microwave safe bowl.  Microwave on HIGH 7 minutes.  Add in almonds, let sit while completing the rest of the meal, serve warm!

So that’s it for this week.  I’m off tomorrow, looking forward to having the place mostly to myself, working on my second bead embroidered cuff, started it before I finished the last one, and I’m really excited!  I’ll have some photos later in the week…

The Great 2012 Cooking Extravaganza! Day 258 – 263 (Week 38)

Hello again friends, and welcome back!  What a week….

William was home sick from school two more days, so he’s now missed 6 days in the first month of school!  I sure hope whatever the heck is going around out there stays the heck away from us!!!  He’s on another round of antibiotics, hopefully this will be the end for a while.

Mike is still fighting off the first bug, using his inhaler a lot, sleeping more than not when he’s not at work.  I feel bad for him, but I’m still fighting it, too.  My chest is still a little tight, but the stuffy nose is all gone and the sore throat with it, so I guess I’m getting better.  Out of antibiotics, so I certainly hope so!!

Work is going better, I’m actually helping to train a new person, so maybe all my uncertainties are all in my own head!  That would be business as usual for me, I’m always my own worst enemy.  I’m still learning new things, so that’s good, and keeps things interesting.

And last but not least, it’s been a busy weekend.  We were supposed to go visit my folks, dad’s birthday today, but since William was sick again, and Mike and I weren’t quite over what we had, we didn’t think it would be the smartest thing we’ve ever done to go over there.  But, we did get laundry done, the kitchen is cleaned up, got the yard cleaned up so maybe the HOA will leave us alone for a while, even got James to come home and help for a bit.  And got what I hope is a nice surprise…  the neighbors pulled up with a trailer, so maybe they are moving out!  That would be the highlight of my year!!!  They never cut their grass, the HOA ends up doing it about once every three months, so the weeds are literally 4-5 feet high before they get cut back, so guess what our yard is full of!  Keep your collective fingers crossed…

So, on to the week in food.  It was a very chickeny week around here, but we tend to eat a lot of chicken, so that’s not really unusual.  Maybe you’ll see something you want to try!

Monday

Chicken and Sausage

3 Boneless skinless chicken breasts

1 rope smoked sausage

1 Jar tomato basil spaghetti sauce

1 Tbsp garlic powder

Cut the sausage into chunks, put it in the crock pot.  Put the chicken in whole.  Add the sauce and garlic.  Set on low, and cook 8-10 hours.

During the last hour, prepare some rice in your rice cooker to manufacturer’s directions, adding a little garlic and chicken flavor boost to the water before you add the rice.  Stir it up before you turn on the cooker.

Remove the chicken and sausage from the crock pot, shred the chicken, cut the sausage into smaller chunks, add it back into the sauce to keep it warm.

Put about 1 cup cooked rice in each bowl, top with chicken, sausage and sauce, and serve!  You can add a little shredded cheese if you want.

This was OK, but it needed something, and I couldn’t figure out what…

We had some steamed broccoli on the side…

Microwave Chocolate Chip Cookies

1 Tbsp melted butter

1 Tbsp white sugar

1 Tbsp brown sugar

3 drops vanilla

1 egg yolk

1/4 cup flour

2 Tbsp chocolate chips

Mix the sugars, egg yolk, butter and vanilla together in a small bowl.  Add in the flour and mix until a thick dough has formed.  Fold in the chocolate chips.

Spray a small ramekin or coffee mug with butter flavor cooking spray, scoop in the prepared dough, microwave 45-60 seconds, and serve!  (Mine cooked for 50 seconds and were perfect)  You can top off with a scoop of ice cream if you like, would be good!!

Bacon Egg and Cheese casserole

12 eggs

1/2 cup Parmesan

1/2 cup shredded mozzarella

1/2 cup shredded cheddar

1/2 cup half and half (fat free)

1 pound bacon, cut into small pieces and cooked crisp

Salt and pepper to taste

Preheat oven to 350 degrees.  Spray a 13″ x 9″ casserole dish with butter flavor cooking spray.

Mix all the eggs and cheeses together, add the salt and pepper.  Pour into prepared pan.  Sprinkle in cooked bacon, and make sure it sinks in to the eggs.  Cook for 1 hour, testing at 45 minutes to see if done in the center (poke it with a knife, clean = done!).  If you can get it done in 45, then do, but my oven always takes a full hour.

Sorry I didn’t get a “done” shot!  It looked really good.

Allow to cool about half an hour, cut into 8 pieces, package them into individual servings, and you have breakfast for a few days!  Reheat 1 minute in the microwave, loosely covered, salt and pepper if you want, YUM!!!

Tuesday

Curry Chicken

5 boneless skinless chicken thighs

1/2 package Golden Curry seasoning mix

1 cup water

Salt and pepper to taste

Left over rice

1 cup frozen peas

Trim chicken thighs of any large pieces of skin or fat, but leave the little stuff, it’ll cook off.  Cut into bite sized pieces.  Cook in a large skillet over medium heat just until no longer pink.  Add in water, simmer for 10 minutes.  Add in curry seasoning, stir until mixed well, simmer another 10 minutes.  Add in left over rice and frozen peas, cook another 5 minutes, serve!

I had some left over broccoli from the night before, so I reheated that and topped off the bowls with it, except for William’s.

This was really yummy, but then we’re all getting hooked on curry since we first tried it earlier this year.  I’m going to have to find my own mix of spices to make my own curry!!

Wednesday

Mexican night!!

Can you believe, I told William it was Mexican night, and he actually says YEAH!  So here we go…

Frozen burritos topped with enchilada sauce and cheese, baked per package directions, but with my own little twists.

Quesadilla

Flour tortillas

Ground beef

Taco seasoning

Water

Shredded cheese

Butter flavor cooking spray

Cook ground beef until no longer pink, crumbling as you cook.  Drain off excess fat.  Add in about 3/4 cup water and 1/4 cup taco seasoning, stir well, cook until sauce thickens.  Remove from heat.

Preheat large skillet over medium heat, or just a touch lower.  I use the “4” setting on my stove.  Spray pay with cooking spray.  Put in 1 tortilla, spoon in about 3-4 Tbsp prepared beef, top with shredded cheese, top with another tortilla.  Use enough cheese so that the tortillas will stick together!  Cook about 1 minute per side, be careful when you flip it, it can be messy but after a few tries, you learn the tricks to keep them together.  I use two spatulas!

Remove from pan, cut into triangles with a pizza wheel, and serve with sour cream, ranch dressing, salsa, whatever you like!

We had some baked potatoes left over from the week before, I had frozen them after I cooked them, they keep pretty well.  We also had curry, chicken and sausage, and some school sandwiches, so everyone got something they liked.

McDonald’s – yeah, I know, junk food, but I was in the mood!!

Saturday

Pepperoni Pizza Muffins

Mini Pineapple Pizzas

These sort of go together…

2 cans refrigerated biscuits, flattened

1 jar pizza sauce

1 bag pepperoni

1 cup pineapple tidbits (I mean one of those single serve cups, not a whole cup!)

1 bag shredded Italian blend cheese

Preheat oven to 450 degrees.

Spray a muffin pan with butter flavor cooking spray.

Sprinkle corn meal on a pizza stone or pizza pan, whichever you have.

Put the flattened biscuits in the muffin cups, my pan holds 12.  Put the rest on your pizza pan or stone.

Mix about 1/2 jar sauce with finely chopped pepperoni.  Spoon mixture into muffin cup biscuits.

Spread about 1/2 tsp sauce on each flattened biscuit on the pizza pan/stone.  Top with 1 slice pepperoni and 4-5 pineapple tidbits.

Top each muffin and each mini pizza with shredded cheese, as much as you can get on there without overflowing!!  (we like lots of cheese)

Bake at 450 degrees for 10-12 minutes.

Serve!

Mini Apple Pies

2 cans crescent roll dough

1 can apple pie filling

1/8 cup sugar

2 Tbsp cinnamon

1/2 Tsp vanilla

Butter flavor cooking spray

Preheat oven to 375 degrees.  Spray Texas muffin pan with cooking spray.

Separate dough into 8 sections, two triangles each.  Roll up the dough into a ball, flatten it out really flat, put one circle into each muffin cup.  You will have two triangles left, roll them together, then roll them out into a rectangle, or as close as you can get to a rectangle.  Use a pizza cutter and cut the dough into 6 skinny strips, then cut those in half so you have two shorter skinny strips.  Set aside.

Mix the apple pie filling with the sugar, vanilla and cinnamon.  Spoon into biscuit cups.  Top with crossed dough strips, sprinkle with a little sugar.  Bake about 10-12 minutes.  Allow to cool about 10 minutes, serve with a scoop of ice cream.

Sunday

Chicken and Dumplings…  sort of

OK, so this was not my best experiment.  I bought a package of frozen dumplings, and tried to follow the package directions, but all I got was thicker broth instead of good dumplings.  The dumplings were just lumps of dough in the bottom of the pan, they were NOT good.  So, I ended up with chicken, rice and peas in a nice creamy sauce.  It tasted really good, but I was SO disappointed in the dumplings, I was really looking forward to them!

So here’s what I cooked:

3 boneless skinless chicken breasts

2 packets chicken Flavor Boost

1 Tbsp Everglades original seasoning (the green one, not the red one)

1 1/2 quarts water

1 cup frozen peas

1 pkg frozen dumplings

Put all this in the crock pot, cook on low 6-8 hours.  Remove chicken, shred, set aside.

Pour juices into stove top pot, bring to a boil, add dumplings.  The package says to break them into pieces, but they were frozen together, so I couldn’t!  This is probably the problem….  boil 3 minutes, reduce heat and simmer 45 minutes.  I did that, I still had lumpy doughy things in my pot, but my juices had become a sauce, so that was good.

I removed the dumplings, added in some leftover rice and the frozen peas, added in the shredded chicken, cooked it all over low for about 15 minutes to heat up the peas and rice, and served!  It tasted good, but it wasn’t what I had planned, so I was disappointed.  Oh well, guess I need to learn how to make flat dumplings!  Got a pasta machine on my Christmas list…

The Great 2012 Cooking Extravaganza! Day 200-202

Hello again friends, and welcome back!  I guess I’m proving, to myself more than anyone, that I’m just not up to doing this every single day and working and keeping up with the house and doing crafty things…  so I’m just going to post as much as I can, and that will have to be OK!  I’m OK with it…  hope you can be, too!

Anyway, let’s see, last thing I posted was Friday night, and we went out!  LOL!  What’s happened since then…

Saturday was grocery shopping, short list, but I came home with I think 8 Walmart shopping bags full of stuff.  Lots of fresh fruit, meats, bread, some frozen veggies…  fridge is full, freezer is almost full, cupboard is well stocked but not overflowing.  Washed four out of five loads of laundry, cleaned up the kitchen.  Went to Bealls Outlet, FINALLY found a purse I liked for a price I wanted to pay!  Also got two tops and a pairs of jean capris for work, a cup for my desk, and a pair of earrings I plan on copying.

I know it was movie night, but we didn’t do snack type foods for a change, we had Mexican!  Frozen burritos, but cooked my way.  Frozen taquitos, just cooked to package directions, nothing special.  And home made quesadillas!  So here’s how you do it…

Semi-Home Made Burritos

1 pkg frozen burritos of your choice (we like both the beef and bean, and the chicken and rice varieties)

1 small can enchilada sauce

1 cup shredded Mexican blend cheese

Preheat oven to 400 degrees.  Arrange burritos in a large pan with at least a little bit of a lip, you can’t do this on a completely flat pan, it makes a mess!

I believe the package directions say to cook 25 minutes.  I cook them for 22 minutes, then take them out.  Pour enchilada sauce over partially cooked burritos, making sure to get them covered well, take your time!  Spread shredded cheese over all burritos.  Put them back in the oven for 8-10 minutes or until cheese is well melted and sauce is hot.  Serve!

I like to serve this with a little bit of sour cream, or if you don’t have that, they are really good with a little ranch dressing on the side, too.

Home Made Beef Quesadilla

1 pound ground beef chuck

2/3 cup water

1/4 cup taco seasoning

About 3 cups shredded Mexican blend cheese

1 pkg soft taco sized flour tortillas

Butter flavor cooking spray

Brown and drain ground chuck.  Put back into skillet.  Add in water and taco seasoning, bring to a boil, reduce heat and simmer about 10 minutes or until sauce is thickened.

Preheat another large skillet, at least large enough to easily fit a tortilla.  Spray with butter flavor cooking spray.

Put in a tortilla, spread about 1/4 cup shredded cheese, about 1/4 cup meat, another 1/4 cup shredded cheese, top with another tortilla.  Spray top with cooking spray.  Cook about 2-3 minutes or until tortilla is browned and a little crispy, carefully flip and cook the other side.  Cheese will be very melty and yummy!!  Remove to serving platter, cut into 6-8 wedges with a pizza wheel.  Repeat until out of tortillas and meat, you might have some cheese left over.  Serve with sour cream, ranch dressing, enchilada sauce or salsa!

You can also substitute chicken for the ground beef for a lighter and slightly healthier dish, but the taco sauce made with the water and seasoning isn’t quite the same with chicken as with beef.  It still tastes really good, though!!  I like to put a little salsa inside the quesadilla when I use chicken, just makes it moister.

So, Sunday, no cooking going on.  Went to my mom’s for the day, spent the day swimming with my boys, eating mom’s picnic food (hot dogs, potato salad, deviled eggs, chips, baked beans, white cake with chocolate icing…  YUMMY!!!), mom bought me some tops and some new sandals, and then she and I clipped, sorted and tallied coupons that her group sends to a military base in Italy for the military wives to use at the commissary!  I just thinks that’s so cool!!  She said that we ended up with almost $4000 worth of coupons in that batch.

And last but not least, today…  Monday was a little crazy at work, two people called in sick, and silly me, I volunteered to cover for one of them!  Between my inbox, his inbox, my reports, his reports, I didn’t quite finish everything I was supposed to do today, but I think I did OK!  It was the busiest day I’ve ever had since I started this job, first time I even came close to feeling overwhelmed.

James and I made Cottage Pie, and then I made pineapple angle food cupcakes.  So here are the recipes…

Cottage Pie

1 1/2 pounds ground beef

2 Tbsp dried onion flakes

1 Tsp garlic powder

Salt and pepper to taste

2 cups water

6 Tbsp gravy mix

3 pounds potatoes

1 cup shredded cheese of your choice

Wash and peel potatoes, cut into chunks, boil until soft.  Drain, put back in pot.  Add in 1 stick butter and about 1/2 cup milk, mash with a hand mixer, adding in additional milk if needed, about 2 Tbsp at a time, until smooth and creamy.

Brown and drain ground beef, put back into skillet.  Add in garlic, onion, salt and pepper.  Add in water and gravy mix.  Bring to a boil, reduce heat and simmer, stirring frequently if not constantly, about 10 minutes.

Heat oven to broil.

Layer meat mixture in bottom of casserole dish.  Cover with potatoes, smoothing over the top.  Top with shredded cheese.  Put dish on a cookie sheet to keep from messing up your oven in case it boils over.  Heat about 5-8 minutes under the broiler, just until cheese is melted and slightly browned.  Serve!

Pineapple Angel Cakes

1 box angel food cake mix

1 can UNDRAINED crushed pineapple

Mix these together very well, using hand mixer.  Prepare muffin cups with butter flavor cooking spray.  This makes AT LEAST 24 normal sized cupcakes.  I actually ended up with 12 regular sized and 12 jumbo!!

Cook the normal sized ones 15 minutes at 350 degrees.  Cook the jumbos 20 minutes at 350 degrees.  When cooled, you can serve plain or top with whipped cream, strawberries, blueberries, it’s up to you!  They are REALLY good plain!!

The Great 2012 Cooking Extravaganza! Day 135

Hello again friends, and welcome back!  Hope you are having a Wonderful Wednesday!

I officially have my own territory and my own set of properties to manage, so today was cool!  Instead of trying to find things to do to help other people, I actually had my own stuff to do, and I was able to work out a schedule of sorts.  I still have a lot to learn, but I’m surrounded by a great group of people, and with one obvious exception, they are all ready and willing to help me.  All in all, it was a really good day!

William did the bike home bit today, called me when he got home like the good kid he can be.  No homework tonight, so he’s been goofing off all afternoon. Mike came home sick again, went  to the doctor, who has him on a liquid diet for today, then light stuff tomorrow.  Thinks he has some kind of intestinal virus.  I know he’s got to be tired of getting sick, seems like it happens an aweful lot!

James is off tonight, but he had to go to the clinic for his follow-up on his back.  Then he went over to the girlfriend’s place for a while, so he missed dinner.  Oh well, his loss.

Speaking of dinner, here’s tonight’s recipe:

Chicken Soft Tacos

4 boneless skinless chicken breasts

2 quarts water

1 packet chicken Flavor Boost

4 Tbsp taco seasoning mix

Put all these into a crock pot, cook on LOW 8-10 hours.  Take out the chicken and shred it.  Put the shredded chicken into a large skillet, and add:

1 1/2 cups water

1/2 cup taco seasoning mix

Cook on medium until the sauce thickens a little.  It will all soak into the chicken, so you really only cook it about 5 minutes or so.

Serve with shredded cheese and soft tortillas, or you could use crunchy taco shells if you wanted. Top with whatever you like on your tacos, like lettuce, tomato, onions, ranch dressing, sour cream…  it’s up to YOU!

Leftover chicken is great in an enchilada bake the next night!!

The Great 2012 Cooking Extravaganza! Day 43

Hello again friends, and welcome back!  So glad you decided to join me again…

Monday’s around here are a little hectic, scouts, early release from school, the one night a week things aren’t very laid back, so it’s quick and easy dinner night.  Tonight, it was…

Beef Quesadillas

1 pound ground chuck, browned and drained

2/3 cup cold water

1/4 cup taco seasoning (I use Tone’s, got a HUGE bottle at Sam’s)

Shredded cheese of your choice

Flour tortillas, about 6

Cooking spray (I used olive oil)

Mix browned ground chuck with cold water and taco seasoning, cook over medium low heat 10-15 minutes or until thickened.

Spray a large frying pan with cooking spray, place in 1 tortilla, sprinkle with about 1/4 cup shredded cheese, 1/3 of the prepared beef mixture, top with another 1/4 cup shredded cheese and another tortilla, spray with cooking spray.  Cook 2-3 minutes or until tortilla is lightly browned and cheese is starting to melt.  CAREFULLY flip over and brown other side, cooking another 2-3 minutes.  Remove to plate, cut into 6 slices with pizza cutter and serve!  You can also serve sour cream or guacamole on the side.  Or you can substitute chicken for the beef.  These are a great quick and easy meal!
